GPS 0104 - Introduction to the Global Food Systems Credits: 3
This course provides a critical introduction to the global agro-food system. Food is used as an entry point to investigate key historical and contemporary issues and debates ranging from corporate concentration and environmental degradation to worker rights and food insecurity in the food system. Students will examine and reflect on critical issues influencing food production, processing, distribution, and consumption and how food-related challenges found across the globe intersect with inequalities such as race, class, and gender. Students also will examine various alternatives and movements that have risen in response to the economic, social, and political issues embedded in the global food system.
